Things are humming right along in the garden at ECOS in Richmond including the squash section that seems to be a favorite for bees! Up this week for distribution are more beets, tomatoes and, of course, more squash. We are getting ready to start some seeds for our fall crop. We are working on educational sessions around seed starting, composting, and canning and preserving. If anyone has any suggestions on a good way to conduct the canning classes, please let us know. We are also catching up the weeding around the potatoes that somehow snuck up on us; the weeds had a great spot to grow because no one noticed! Other than keeping things up, we look at the garden in the mid-summer light and wonder at the blessings this opportunity has provided us. We are thankful and blessed to be a part of reconnecting with our agricultural past. Waiting patiently on the corn.corn
