Hello everyone, I hope all is well. My name is Alex Sanders and I am the Grow Appalachia Garden Site Supervisor at Project Worth Outreach located in Menifee County in Northeastern Kentucky.
Fall has finally arrived in northeastern Kentucky. The days are less humid and the temperature is lower and the nights and mornings are cooler. All the leaves have turned to vibrant and beautiful colors and the pace of life seems to have slowed a bit. Our gardeners have started their winter preparations but we still have a few gardeners attending fall gardens. These gardeners are growing kale, collard greens, spinach and turnips just to name a few vegetables. We still have some gardeners harvesting sweet potatoes.
We have just about wrapped up our program in Rowan County and are doing the same in Menifee County. Our latest activity in Rowan County was our annual pot luck meal held on September 16. We had several gardeners in attendance and several tasty dishes to sample. Everything was delicious and we had a great time hanging out and enjoying each other’s company while we ate and talked about our 2014 garden and our hopes for our 2015 garden.
We will have our 2014 Menifee County pot luck meal on October 13, 2014. We are expecting a good turnout based on the conservations we have had with our Menifee County gardeners. If past years are any indication I expect to have a lot of tasty dishes to sample at this meeting.

Chicken, Tomato and Avocado Salad

 

Prep time: 30 minutes
Total time: 40 minutes
Servings: 4

 

Ingredients
1 package Simple Truth Organic® Thinly Sliced Chicken Breasts
1/4 cup Simple Truth Organic® Italian Extra Virgin Olive Oil
Juice of 1 lemon
Simple Truth Organic® Baby Spring Mix
Avocado
Simple Truth® Organic Grape Tomatoe

 

Directions
Place the chicken breasts in a plastic bag. Add the olive oil and lemon juice to the chicken and shake so all of the chicken is marinating. Let marinate 30 minutes.
While the chicken is marinating, prep the rest of your ingredients: Cut the tomatoes in half and slice the avocados.
After 30 minutes, place the chicken on a preheated grill pan. Season the chicken with salt and pepper.
Cook for 2 minutes and rotate the chicken 45 degrees to create grill marks. Let cook another 1 to 2 minutes.
Flip the chicken; season with salt and pepper. Cook on the second side another 2 minutes, then rotate 45 degrees again to finish cooking (cook to an internal temperature of 165° F).
Assemble the salads: Place the spring mix in the bottom of a bowl and top with a chicken breast. Garnish with sliced avocados and tomatoes.
Serve with your family’s favorite salad dressing.
