Sunday nite I made Pakistani Kima with only veggies from our garden. I had to use store bought beef, butter and spices but other than that is was all from the garden and it was Heaven. So here is the recipe it’s a great one pot fast meal especially if your into curry.

Pakistani Kima
1 lb ground beef
1 c. chopped onion
3 or more cloves garlic, minced
1 T. butter
1 T. curry powder
1 t. salt
dash pepper
dash cinnamon, optional
1-2 t. minced ginger (or a dash or more of ground ginger)optional
1-2 t. minced turmeric (or a dash or more of ground turmeric)optional
1-2 c. tomatoes, fresh chopped, frozen, or canned
2 potatoes, diced small (can be any kind I used a mix of regular and sweet)
2c. peas or green beans (I used a mix of snapped green purple hull peas and freshly shucked purple hull peas)

Brown beef then strain off the fat.
Add butter and onions to the pan fry until the onions are translucent.
Add spices and garlic, stir and fry for maybe a minute.
Add the remaining ingredients stirring occasionly and covering if neccessary to finish cooking about 20-25 minutes.

Serve over hot rice.
