The Henderson Settlement girls club have been working hard this fall to earn money for the many activities they have planned for the spring. Since we had a bunch of Cinderella Pumpkins donated to us by a local gardener. We decided that this would be a great learning experience and a great fundraiser for the girls. We decided to make Pumpkin Loafs, Pumpkin Cheesecake and Pumpkin Spice Cakes to sell during the holidays. The first thing we had to do was discover how to make the pumpkin puree we needed for the cakes.  The girls used the internet to find out how to make pumpkin puree, then we all pitched in to clean, peel and cook the pumpkins to make puree. What did the girls learn from this, you might ask? Cooking from scratch is HARD WORK! After they had cleaned, peeled and cooked six large pumpkins, we discussed what to do with the seeds from the pumpkins. After I explained to the girls how to save the seeds from the pumpkins. We decided to save the seeds from the pumpkins for next years garden.
