Last night eight of Red Bird Mission’s Grow Appalachia participants attended the Plate It Up cooking class held at the Clay County Cooperative Extension office. These classes are a  healthy cooking seminar focused on local grown foods where the attendees get to physically watch the trainer prepare three healthy recipes.

Last night’s recipes included Kale Potato Soup, Sweet Corn and Couscous Salad  and a Turkey Bacon and Tomato Dip. All of these recipes were very heart healthy and were made from Kentucky grown produce which are two big practices that Grow Appalachia wants to introduce to the community.

After these delicious recipes have been prepared attendees are invited to sample the food and sit in fellowship and share their thoughts and ideas about the food. Everyone absolutely loved the food and were very interested in trying these recipes at home.

After we had all finished our samples, there were door prizes for some and all attendees left with their own copy of the Living Well cook book a full stomach and a smile. Grow Appalachia also had an issue of the Living Well Cookbook donated to their lending library.
