Growing the food was only half the battle; knowing what to do with a sudden abundance of zucchini was the other. Alongside the gardening lessons, we our participants attended healthy eating and nutrition classes.  Kerri Boone, Live Well Director taught us how to cook with what we grew and using fresh grown garden-grown herbs. We weren’t just taking home baskets of produce—we were taking home the knowledge of how to fuel our bodies right. ! We learned to make make Black Bean Burgers, White Bean Salad using our onions, kale, spincah and cucumbers-Squash Fritters allowing us to learn how to prepare zuchinni a different way then just bread and chipolet bowls using sweet potatoes, roasted corn, tomatoes.  For dessert we tried sweet potato cookies they were yummy! Many could not decide which was their favorite recipe becasue we enjoyed them all.    Faye and Mark both attended the workshop from what I was told or at leas t Faye enjoyed the food :)!  We feel we didn’t just grow a garden this year; we grew a healthier, happier community.
