Here at the Pine Mountain Settlement School Farm we have been growing collard greens since October and have enjoyed their vitamins and minerals throughout the long winter. The Champion variety grew superbly after being transplanted after three weeks in the greenhouse. Our staff has enjoyed trying different recipes for that classic southern side of delicious sauteed collard greens. Family recipes have been our go-to for trustworthy instructions for preparing quality greens. We loved adding bacon, mushrooms, or onions to enhance the flavors of fresh greens.
Our collards have fed our staff, a few lucky rabbits, and our pet turtles. We have three Eastern box turtles and one aquatic yellow-bellied slider. They love fresh greens, fresh fruit, and worms. I have noticed that they gobble up greens from our garden with more gumption than when presented with the same greens from the grocery store. All in all, all walks of life at Pine Mountain Settlement School have been nourished and fed by our sweet little Winter garden.
