Look at this beautiful arugula that we didn’t plant!  We left a patch of arugula to go to seed over the summer.  When the weather finally cooled off in the fall, all the seeds that had fallen sprouted at the perfect time to become a lush crop that will let us cut and come again as long as we can keep it covered from the frost.  Now that’s some low-input Season Extension!
