Thanksgiving wishes from our garden to yours! This time of year is a great time to use up some of those yummy home grown sweet potatoes. One of our gardeners decided to use her ration of potatoes to make a sweet potato pie for Thanksgiving. Here is how you can make your own:
After harvesting the sweet potatoes from the ground, place them in a bowl and allow them to cure for about 3 1/2 weeks before using.
Step 1. Gather the ingredients.
4 sweet potatoes, 1/2 cup brown sugar, 1/4 cup Coconut Milk, 2 eggs, splash of maple syrup, handful of pecans, a few mini marshmallows, 1 tspn of vanilla extract, 1/4 tspn of pumpkin spice, 1/4 tspn of ceylon cinnamon
Step 2. Chop the sweet potatoes into bite size pieces.
Step 3. Boil sweet the potatoes for 15 minutes or until soft.
Step 4. Mix the sweet potatoes and all of the ingredients in a bowl.
Step 5. Bake for 35 min at 350 degrees.
Step 6. Decorate and viola`! You have a sweet potato pie!
***Recipe will yield two pies.
