Do you have so many vegetables coming out of your garden you don’t know what to do with them?!? Well here is a yummy and healthy way to cook up the veggies you’ve been growing all summer.

Veggies:
Zucchini
Eggplant
Onions
Peppers
Tomatoes
Garlic
Cucumbers
Olives
You can add chopped romaine or spinach at the end if you like;)

Bread:
Crusty, thick slices of bread with Olive Oil, salt, pepper and herbs while grilling/toasting

Dressing:
3T Dijon Mustard
3T Honey
3T Balsamic Vinegar
3T Olive Oil
Herbs de Provence, Basil, Parsley, Thyme, Oregano and Rosemary

Procedures:
1. Grill your Zucchini, Eggplant, Peppers and Bread
2.Saute Onions and Garlic
3. Take everything off the heat, chop tomatoes, cucumbers, Olives and Bread
4. Mix it all with Dressing and add Bread last
5. Enjoy!!
