Tom Fields here with Stone Soup.   Squash casserole, sauteed squash, squash and onions, steamed squash, squash and corn, mashed squash, squash pancakes, diced squash, sliced squash, and pickled squash.  It seems we have found as many culinary options with the prolific summer squash as Private Benjamin Buford “Bubba” Blue and his almost endless knowledge of shrimp dishes in the movie “Forrest Gump”.

As the last summer squash makes its final push, I would like to take a moment and thank the squash for its prolifery and nutritional value.  It is simply amazing how much food and nutrition can come from one little seed and a little care. Summer squash contains important antioxidants, vitamins, and minerals such as Vitamin C, Folate, and Manganese.
