In late April, High Rocks hosted the “Heart Healthy Cooking” class. There were several participants taking appreciation for the classic Louisiana dish, Jambalaya, but with a quirk of fresh veggies.
The veggies in the dish were from our gardens that we have located at our base of operations, even including our own homemade sausage. Veggies that we have distributed and use ourselves range from zucchini, squash, carrots, broccoli, peas, tomatoes, potatoes, spinach, lettuce, cabbage, peppers, and several others.
In May we held our garden planting workshop, however, due to flooding, many participants have yet to plant their gardens. Here in Pocahontas County, WV, which is the coldest part of the state, 24 out of 31 days in May had rain and 4 days in the last week of the month had temperatures in the high 20’s with large quantities of frost. With June came lots of flooding, even though there have been some grappling issues, we continue to highlight how it is still not too late to plant certain crops in their gardens. In August we look forward to holding a food preservation workshop.
