Hello! My name is Chelsea Watson and I am from Louisville, Kentucky. I attend Berea College in Berea, Kentucky. My major is communication with a minor in dance. It is not the typical major and minor for gardening but I am here to learn as much as possible about gardening. This summer, I will be interning at the LCAAHC farm through the Grow Appalachia program. I am super excited to participate in a community connected through gardening.
I do not have a lot of experience in gardening; however I’m interested in learning about the planting, growing, picking and canning process. In addition, I would like to learn about the health benefits of eating fresh produce particularly leafy green vegetables. 6 months ago, I changed my diet completely and started drinking green smoothies. Green smoothies are tasty and provide nutrients to the body. However, people are afraid of the “green juice” but I would like people to learn and try green smoothies. In fact, I would like to do a program day on green smoothies.
I arrived at the LCAAHC yesterday and I was amazed. There were jars, jars and jars of vegetables, fresh eggs and tons of water in the kitchen. Needless to say, the LCAAHC farm gets busy and I cannot wait to be a participant! Afterwards, I took a tour of the house LCAAHC provided me to stay for my internship. All I can say is wow! The house is beautiful and fully furnished. I am so thankful for all the hard work the LCAAHC workers put into the house to make my internship as comfortable as possible.
